Remove the leafy top and woody bottom, strip the tough outer layers, and you'll discover the delicious white inner stalk. Chop or mince and add it to Asian-inspired curries, stir fries, and marinades. Use the discarded lemongrass bits to infuse tea, broth, or soup with citrus flavor.
