Ceylon Cinnamon is regarded as the highest quality of all types of Cinnamon, with a more delicate and refined flavor.  Once your tree is mature, harvest the spice by cutting small branches to peel and dry the bark, which can be used as Cinnamon sticks or ground into the familiar powder.  The leaves can also be used to impart flavor in marinades and sauces, as well as brewing tea.
